It has been ages since I last did this super good banana bread… I was still living in my studio in Lisbon and life was very different. But despite the usual saudade that comes to me when I think about Lisbon, I need to share with you this insane recipe. It is packed with a lot of proteins, and you can change a few ingredients to adapt to your preferences. You could add chocolate chips, or maybe skip the cinnamon and add cardamom… Make this and thank me later!
2 bananas (mashed) + 1 for decoration
(Option: if you want less carbs, use 1 banana instead of two and substitute with a couple of spoons of greek yogurt)
3 tbsp of coconut oil (melted)
50g (2 scoops) protein powder
100g oat flour
2 tsp cinnamon
1 tsp of baking powder or baking soda.
Mix all the wet ingredients together and then add the dry ones. Add a handful of blueberries for extra happiness and put in the oven at 175°C for 45 minutes.
